Saint-Florentin is a small fortress town on the border between Burgundy and Champagne, dominated by its Gothic and Renaissance church. It is a peaceful place, filled with history, and visitors can stroll through its picturesque lanes dating from the 16th century, climb the gently sloping hill or descend the steps to the river, stopping on the way to savour the delights of its markets, shops and restaurants. The town lies in a green valley, with very varied scenery, surrounded by the farming villages and hamlets of the Saint-Forentin region, which give the two local cheeses, Saint-Florentin and Soumaintrain, their delicious flavours...
